Sprouted Moong Sweet Potato Stew

Ingredients:

  • Green Moong ( pre soaked and sprouted ) – 1 cup
  • Sweet Potato – Peeled and cubed into 1 inch pieces – 3 cups
  • Chopped onion – ½ cup
  • Chopped tomato – 1 cup
  • Olive Oil – 1 tbsp
  • Cumin seeds, turmeric powder – for seasoning
  • Spices – dhania jeera powder, garam masala powder, red chili powder
  • Tamarind paste – ¼ tsp
  • Ginger garlic paste – 1 tsp

Method:

Set Instant Pot in Saute Mode.

Add oil and seasoning ingredients and let it splutter. Add chopped onions, tomatoes, and garlic and ginger paste Saute together.

Add sprouted moong and sweet potatoes. Add enough water to just cover. Add salt, spices, and tamarind paste. Give it a mix.

Close IP, Cook in High-Pressure Manual Mode for 2 mins. Release pressure naturally.

Enjoy with Chapatis, rice, or quinoa.
