If using canned beets, ensure that ingredients have only beets, salt and water. I use these since they are really convenient and do not have preservatives. If you cannot find this kind, use fresh beets instead.
Heat oil in a pan and add turmeric and red chillies broken into 2 or 2 pieces.
Add carrots and beets and about half a cup of water and salt, Cook the veggies for 4-5mins until soft.
If using canned beets, let carrots cook first, and add drained beets after.
Save the juice from the can for a refreshing Beet juice drink!
Once the veggies are cooked, turn off the heat.
Add coconut, tadka, and lemon juice, and give it a mix.
Sprinkle sliced almonds generously on top.
Enjoy with rotis, rice, or quinoa!
Carrots and beets have a low glycemic load, so they can be included in a diabetic-friendly diet, but you may want to watch your portions as always.
