Cabbage with Pumpkin Seeds

Curries, Low Carb, Side Dish

Ingredients:

  • Chopped green cabbage – 3 – 4  cups
  • Chopped shallot or onion – ½ cup
  • Roma Tomato – 1 chopped
  • Green Serrano Pepper – 1 chopped
  • Olive Oil – 1 tbsp
  • Cumin seeds, turmeric powder – for seasoning
  • Spices – dhania jeera powder, red chili powder (optional based on spice needed )
  • Ginger garlic paste – 1 tsp
  • Lemon juice – 1 tbsp
  • Chopped cilantro – for garnish
  • Pumpkin seeds ( unsalted raw ) – ¼ cup

 

Method:

Set Instant Pot in Saute Mode.

Add oil and seasoning ingredients and let it splutter. Add chopped onions, tomatoes, and garlic ginger paste. Saute together.

Add chopped cabbage, spices, and salt. Add ½ cup of water. Give it a mix.

Close IP, Cook in High-Pressure Manual Mode for 1 min. Release pressure naturally.

Mix in lemon juice.

Sprinkle a generous amount of raw pumpkin seeds and garnish with chopped cilantro.

Enjoy with Chapatis, rice, or quinoa.

 

Note:

This dish is diabetic-friendly and has a very low glycemic index and load. Pumpkin seeds add anti-oxidants and significant nutrition benefits.
