Goji Berry Spinach Fried Rice

Rice and Grains

Ingredients :

  • Olive oil – 2 tbsp
  • Cumin seeds, turmeric powder – 1 tsp each
  • Green Serrano Chili – 1 chopped
  • Garlic and ginger chopped  – 1 tsp each
  • Pre-cooked and refrigerated brown or white rice – 2 cups
  • Dried goji berries – ½ cup
  • Spinach – Rough chopped 1 cup
  • Soy sauce, Sriracha sauce
  • Chopped walnuts for garnish – 2 tbsp

Method:

Soak goji berries in hot water for 5 mins. Drain the water.

In a pan, add Olive oil, cumin, and turmeric powder.

Saute chopped garlic, ginger, and green chilies, along with soaked goji berries.

Add pre-cooked brown or white rice preferably chilled in the refrigerator for 4-6 hours or more.

Mix together,  adding salt and soy sauce for taste and color. Mix in a few tsp of  Sriracha sauce for spice as needed.

Add chopped spinach and mix it all together and turn off the heat. 

Add chopped walnuts to garnish

Enjoy with Greek Yogurt on the side !
