Goji Cardamom Nut Seed Granola

Quick and Easy

Ingredients:

  • Rolled Oats – 3 cups
  • Sunflower seeds – ½ cup
  • Pumpkin seeds – ½  cup
  • Dried goji berries – ¾ cup
  • Chopped raw walnuts – ¾ cup
  • Sliced Almonds – ¾ cup
  • Chia Seeds – ¼ cup
  • Coconut Oil – ¼ cup
  • Maple Syrup, Agave or honey – 2 tbsp
  • Cardomom Powder – ¼ tsp
  • Salt – 1 pinch

Method:

Preheat the oven to 300 degrees.

Mix all ingredients together in a bowl.

Spread evenly and bake for 30 – 35 mins in the oven. Turn and mix halfway through.

Enjoy this granola goodness over greek yogurt, or by itself!

Note:

I prefer to keep sugar syrup to the minimum here. You can skip it altogether or try using a few chopped dates in the mix instead.
