Oats Banana Date Muffins ( No added sugar )

Quick and Easy

Ingredients:

  • Ripe bananas – 2
  • Eggs – 2
  • Milk – ½ cup
  • Coconut or Canola oil – ¼ cup
  • Rolled Oats – 1-1/2 cups
  • All-purpose flour  – 1 cup
  • Baking powder – ¼ tsp
  • Baking soda – ¼ tsp
  • Cinnamon – ¼ tsp
  • Chopped pitted dates – ½ cup
  • Chopped raw walnuts – ½ cup

Method:

Preheat the oven to 400 degrees.

Mash bananas and mix and whisk well with the eggs, milk, and oil.

Add all the dry ingredients and mix together along with dates and walnuts.

Scoop the mixture into a muffin pan. It should make about 12 muffins.  Bake for 25-30 mins.
