Press and squeeze tofu to remove water and cut into half-inch cubes.
Heat oil in a pan and add seasoning ingredients. Once they splutter, add onions and ginger garlic paste . Saute together.
Add diced peppers and salt. Saute together until peppers are crisp and cooked. Add cubed tofu and give it a mix.
Add coconut milk, spices, and soy sauce. Add water, based on the consistency you desire. Give it a mix and heat for a few minutes so the flavors are all absorbed.
Turn off the heat and mix in chopped spinach. Spinach will wilt but remain green and crisp.
Enjoy with rice or quinoa.
