Simple Salad

Low Carb, Quick and Easy

Ingredients:

  • Romaine Lettuce – 1 head
  • Tomatoes chopped – 1 cup
  • Red onions sliced – ½ cup
  • Cucumbers chopped – ½ cup (optional)
  • Walnuts chopped – ½ cup
  • Olive oil, black pepper, red chili flakes, lemon juice, salt  – for salad seasoning

 

Method:

Slice Romaine Lettuce across into ribbons.

Whisk a quick dressing with  2 tbsp olive oil, 1 tsp of lemon juice, salt, and peppers.

Mix in all the ingredients and enjoy the crisp goodness of this simple salad!

 

Variations:

Spread hummus of your choice on lavash bread, and make a delicious wrap with the salad.
